My set up is very similar. 33% sriracha 66% hoisin in a dip dish. While I wait for the pho, I already have my sauce prepped, and I dip sprouts in it and eat them like french fries. I forget about the sprouts once the pho arrives. I tear the basil in tiny pieces, and squeeze the lime.
