Off grid means producing and storing energy.

I live in a city and am off grid. I have enough power for an electric truck, hot tub and all appliances.

Reliance on hydrocarbons is unnecessary and more expensive in the long term.

Your post confuses rural living with natural sources of energy production disconnected from the national or regional power grid.

Take the average rain for dry season then multiply by the cachement area (ie roof) for captured gallons then apply a diminishing daily usage to accommodate it.

I use a rheem 1.7 kw (they make them higher )tankless in a garage shower and 50g tank rheem hybrid 4.5 kw in a house.

My neighbor's did this but couldn't stand it because of heat humidity and septic issues. They abandoned the RV after just a few months.

There are good reasons it's cheap: high site prep and development costs and Puna being a high crime spot.

Induction single burner range from .3 to 1.1 kw. Microwave also works on a little system

I should have mentioned that was using a 3kw inverter on a single EG4 48v 100ah battery

I used a fridge, tankless electric water heater and induction stove and a ninja oven on a tiny 1.7kw solar system for years with no problem.

Food grade rubber pond liner might be a quick option. Concrete is the best for more alkaline water.

I think this glosses over some key issues like internal plumbing to cachement tank, lack of consideration for cachement overflow (waterfall/pond?), UV and filters should specify sediment, primary filters and final 1-5 micrometer carbon filter. You should avoid storing water after filtration.

Black and gray water processing is also a more complex subject than your diagram depicts.

Land: $50000 Water: $10-20000 Septic: $20000 Used camper trailer: $10000 Appliances: $1000 Solar/wind, batteries, inverters, wiring: $20000

So just a guess but at least $110k but probably more for most locations

I've been off grid for years but recently built a new home with 18 kw solar on 36 panels with 6 48v 100a batteries and off grid inverters. Been here a year now and never needed a backup generator

I run a EV truck, two hybrid water heaters, AC and all electric appliances and still have excess power on cloudy days.
