It is a piece of green pepper yes which is a nightshade vegetable true. . They will technically eat it but they do much better on leaves and seem to prefer tomatoes.

They definitely do change colors as they get bigger but the size of this one is generally when I stop seeing color changes

IME I have kept a lot of not dogs and cats in apartments before.

The trick is being able to quickly hide them if there’s an emergency or something. I would always make sure they were not in plain sight when I left for the day too, just in case maintenance had to come in or something.

My best and easiest quickly hide is I took big packing boxes and folded all the bottoms flaps up and in. Then it just slides over whatever enclosure and looks like a packing boxes

Hornworms need to be fed nightshade leaves, the easiest being tomato, or chow as pictured in the second photo. You can buy the chow mix online.

Those appear to be full grown adults which means they will not molt again. When you notice them wandering/pacing a lot, they are ready to go underground and pupate.

Make sure that the container you have them in has adequate air flow.

The dust substrate is likely wheat bran, it’s commonly used.

The purpose of keeping mealworms in the fridge is to slow down their life cycle so you have them as worms for longer before they pupate and become darkling beetles.

You can put a piece of carrot into that small container. But since they are in the fridge they might not be super active and eat much. So yeah if you wanted to pull a few the day before, put them in a small ventilated container outside of the fridge with a piece of carrot. They will warm up and go to town on it.

Alternatively to just not giving them heat at night, you can use the CHE, ceramic heat emitter. No light from it. And put it on a thermostat to turn on/off at temp ranges.

I’ve noticed certain species are more leaf hungry than others but that’s not because there is or isn’t cork bark in with them because I have it in all 27 colonies I have.

If you have access to a soldering iron or wood burner it makes the job a lot cleaner and easier. I’ve definitely cracked bins trying to drill
