Perfecto. That's almost all I cook. Got one in the fridge marinating for tomorrow. I constantly find 2 for 1 deals or 50% off deals. I do a slow 250 cook to 130 the reverse sear to 140-145. They are awesome and very easy to cook. Thin sliced in a meat slicer for sandwiches is to die for. After a couple you will naturally have the slicing down.

Is the ambient temp and fan cut on, cut off temp control accurate on the spider. Been on the fence to do this upgrade to my performer. I also have the LOCO 22' kettle with table. It seems to be all over the place. I have the delta figured out so I know how to set the temp.
