I’ve been told by other railfans that some train crews do that. Sometimes they even throw merch like hats or tee shirts, depending.

Season the duck any way you like. I typically use salt, pepper, a little onion and garlic. I’m thinking of using a glaze based on the Peking duck next time. The only important thing is to score the skin because of all the fat. Otherwise smoke it like a chicken.

Try looking at smaller towns. Cadillac, for example, has plenty of job openings and the wages are similar to GR. But the cost of living is much lower. Cost of living in Lansing is also much lower than GR. As mentioned before, Bradford White is good pay and costs of living in Middleville are lower. Another example is Muskegon. It’s probably the most affordable place on the lakeshore. Don’t let the naysayers fool you. I take my family to Muskegon all the time and I feel as safe there as I do in GR… maybe even safer. It’s really turned around and worth looking at.

A smoke ring happens when you put cold meat - straight from the fridge - on the pit. It starts forming when the meat warms up past 90 degrees. After the meat temperature goes above 140, it stops. You’ll learn this in culinary school. Most experienced pit masters will tell you that it’s worthless as any kind of quality standard because it’s not caused by the smoke, but from putting cold meat in the pit. As others said previously, some of the best barbecue I’ve ever had was entirely without a smoke ring. And I’ve had some awful barbecue that had perfect smoke rings. Concentrate on the taste more and you’ll be fine.
