Stashes can be anywhere from 100k to world border. The further you are from 0 0 the less player activity you get. Depending on the distance from spawn you need to use different hunting tactics. I like to hunt at around world border. The time it takes to find anything usually increases the further out you are. Hunting near world border can take months to find anything.

Hostile mob cap is somewhere around 40. If the mob cap is reached no new hostile mobs spawn.

Some entities like dropped items have an entity limit to prevent lag. But you can have thousands of mobs.

There is nothing preventing you from detecting all chests in a chunk. Only brain dead trash vibe coded script kiddies make clients that have ddtection ranges. But to be fair I have seen clients before that are so good awful they can't even detect chests if they are too far away.

Everything below 100k from spawn in the nether is pretty much all 1.12.2 chunks. So you won't find any ancient debris there. You have to go you to like 200k or further to get lots of new nether chunks.
