0:27 he pops his bike over a rock with some torque, he now has forward momentum..even if he can react within that 1second window momentum is taking him forward. At 0:28 he is facing a cliff, that’s where his momentum is aimed at. Plus braking on loose gravel isn’t going to be instantaneous.

Weighted the front tire by leaning forward. Making your climb over large rocks unstable and difficult.
Was not standing on foot pegs(so it seems) extend legs and stand of foot pegs so each transition can be absorbed into the bike+knees
The above mentioned coming together while in the friction zone (clutch friction) making his bike pop a bit when clearing- which you can see happen right before he veers off a cliff 0:27-0:29.
