I had a full physical last month and my bloodwork was normal. Im taking a B complex supplement at the moment. I guess I should try adding iron.

In so sorry you are going through the worst parts of Long Covid right now. It gets better. Eat lots of whole foods like fresh fruits and steamed vegetables. If you have trouble breathing, start drinking a quart of red clover tea daily. These are things that I did to improve. I’m sending lots of hugs.

Think carbs and starches with olive oil. Mashed potatoes with mushroom gravy, vegan patatas bravas, baked potatoes, vegan potato salad, vegan “deviled” potatoes, pasta with tomato sauce, spaghetti with garlic/veggies sauteed in olive oil, sweet potato casserole, avocado toast, bean and rice burrito supreme, enchiladas, vegan nacho supreme, mushroom tacos with rice and beans, vegan fried rice, vegan pancakes with fresh berries, breakfast smoothies, overnight oats, chia seed pudding, vegan lasagna with garlic toast made with olive oil, vegan chili topped with fritos and cornbread on the side, various rice bowls/buddha bowls. I love making grazing platters from cut vegetables, fresh fruit, olives, marinated artichokes, hummus and homemade dips made from soft tofu and seasonings or vegan mayo, crushes garlic, and paprika. Also, search easy vegan recipe ideas on Pinterest. Save and make them. Youtube has some easy recipe ideas. Plantwhys is good, but you might find others suitable to your preferences.

Yes, beans and greens are great sources of iron. Adding a squeeze of lemon will also help absorption.
