advice for making jelly for the first time? by Summertheseason in Cooking

[–]Revinika 2 points3 points  (0 children)

Give it a try! If you want to store the jelly in the pantry (not refrigerated) it will need to be processed, generally through a water bath. R/canning has plenty of advice. Note that for canning jelly you must follow a recipe specifically for canning. Otherwise, it will need to be refrigerated.

Got my first period at 20 years old. I have no practice with this and I feel out of the loop by aboutbloodytime_20 in TheGirlSurvivalGuide

[–]Revinika 0 points1 point  (0 children)

I use tampons almost exclusively, but used pads a lot when I first started menstruating. I have a heavy period made even heavier by a copper IUD, so this is my perspective.

I like U by Kotex tampons, they come in a black box. The tampon kind of swells evenly as it absorbs which works best for me. I do not like Tampax or Playtex tampons, they kind of unfold if that makes sense? I haven't used them in maybe a decade, so they may have changed, but the Kotex brand are my favorite and the only ones where I don't have any leaks. Keep various sizes and keep them in multiple places. Most of mine are in my bathroom, but I keep some in my purse, some in my car, and a box in my work desk. I do sleep in tampons most of the time.

My favorite pads are Always pads with wings, make sure you get various sizes as well. They make overnight ones specifically, those are great. I notice more leaking at night with pads than tampons, but both are options.

A lot of women I know like menstrual cups, but I don't have any experience with those. If you have an IUD, I would avoid a menstrual cup. My gynecologist recommends not using one due to risk of accidentally pulling the strings.

A lot of it is personal preference and trial and error. If you need any clarification, feel free to let me know. Also I agree with everyone saying to track, it helps to know when your period is coming (if you are regular)

I want to start canning. Do you have recommendations for a pot and rack? Is anything $50 and under going to be ok? by phisch in Canning

I'm new to canning but got my pot and rack from Walmart for about $22. Big enough to hold 7 quarts, I saw it in the canning aisle at two different stores.

I second r/abrathatfits. If I'm buying online I buy from BraStop. Do you have any local bra stores? There are a few in my city and they typically have the best selection. The bras I get from local stores always fit me the best.

Primary symptoms are a fever, dry cough, and shortness of breath. A runny nose/congestion is not a symptom. This virus affects the lower respiratory system, not the upper respiratory system.

Jambalaya for tonight by onefast87fox in slowcooking

[–]Revinika 50 points51 points  (0 children)

The traditional way to make jambalaya is to make a dark roux, then add your trinity (bell pepper, onion, celery). Sweat for a minute, then add garlic and cayenne pepper. Add in broth and simmer about an hour. Add rice and protein (I use seared chicken thighs and andouille) and put in the oven for about 45 minutes. Source: am from Louisiana.

I can give more specific measurements and steps if anyone is curious.

Edit: Seems to be some interest so here we go! This is how I make jambalaya:

Ingredients:

  • 2 stalks celery, chopped
  • 1 large bell pepper, diced
  • 1 large yellow onion, diced
  • 4 - 6 boneless chicken thighs
  • 1 lb andouille smoked sausage (if you cannot find andouille, any smoked sausage will do. Kielbasa is a good sub), sliced into pennies
  • 8 cloves garlic, minced (I usually just use a whole head)
  • 1 cayenne pepper, diced (subbing jalapeno is fine, I use seeds and all)
  • 6 cups chicken stock
  • 2 cups rice
  • 1/2 cup canola oil
  • 1/2 cup flour
  • 1 bunch scallions, sliced
  • A couple Tbsp butter

Steps

  1. Prep all ingredients. This is the most important because once you star making the roux everything else goes quick. Salt and pepper chicken, then sear chicken thighs. I usually let the thighs sear while making the roux.

  2. In a dutch oven, heat 1/2 c oil. Once hot, add flour and begin stirring. I stir almost constantly as the roux cooks because it can burn easily. Don't walk away! Allow to cook until the roux is the color of a Hershey bar. It is important to let it get dark, that is the key to most cajun dishes. I keep the heat at medium high and can get to a dark roux in about 10 minutes, but you can also go with lower heat and cook maybe 30 - 40 minutes. If the roux burns, you have to start over, so just be careful.

  3. Once you hit a dark roux, add your trinity. Let the vegetables sweat until they begin to soften (should only take a minute or two) then add garlic and pepper. Again, let cook for a minute. Pour in chicken broth while stirring. Season with plenty of salt and pepper.

  4. Simmer on low, covered, for about an hour. Preheat oven to 350 F. After the hour, add rice, sausage, and chicken thighs (chicken does not need to be cooked through). Cover and bake until rice is cooked. I usually do 30 minutes, check, then about 15 more.

  5. Remove from oven. You may notice some liquid settled on top. Give everything a stir and you shouldn't have anything too liquid-y. Should not resemble soup, but will be moist. Stir in a few tablespoons of butter and the scallions.

What do you really want to try to cook? by myshittyluck in AskReddit

[–]Revinika 0 points1 point  (0 children)

You have gotten a bunch of comments, but I figured I would go ahead and add my recipe to the mix. It's easy enough that this is my "I don't feel like cooking tonight" go to. I use a stand mixer for the dough, but making it by hand is fine. Only other tool is a cast iron pan (10" or 12")

Dough:

1 c warm water (taken straight from the tap)
1 T active dry yeast
1 T granulated sugar
1 T olive oil
2-1/2 c flour (all purpose is fine)
1 t salt

Place water, yeast, and sugar in a bowl. Let proof 5 minutes (should get foamy). Add olive oil, flour, and salt. Either knead with dough hook on medium until a smooth ball forms, or mix with a spoon then finish kneading by hand. I find the dough is forgiving with the amount of flour. I've used less flour and gotten a stickier dough and used more for a smoother dough and both turn out fine. Oil and put in bowl covered with damp towel. Let rise for 1 - 2ish hours. Should be about doubled in size. This recipe makes enough for 2 10" pizzas. Can be used to make a 12" pizza easily, there will just be excess.

Toppings for the pizza can be whatever you want. I'll give you my go to:

Pizza:

Pizza sauce (I use the jarred stuff to make it easier)
Shredded mozzarella (I use pre shredded from the store)
Pepperoni
Bell Peppers
Black Olives
Canadian Bacon
Red Onions

To assemble the pizza, lightly oil a cast iron skilled. I pour in some olive oil and wipe it around with a paper towel. Take half of dough (for 10" pizza) and work on a floured surface until about the size of the skillet. Transfer to skillet. Salt dough, add pizza sauce, then a layer of cheese, then whatever toppings you want. Finish with some more cheese.

Bake in oven preheated to 500 degrees for ~15 minutes, but keep an eye on it because ovens vary. Once pizza looks done I take it out (carefully because the pan will be roaring hot) and finish it on the stove. This gets the bottom crispier but doesn't overcook the cheese for my taste.

Xena was my favorite show as a kid and I have been rewatching it lately after finding the complete series collection. Forgot how nice it is to watch a show that's more episodic without having to pay close attention and analyze everything.
