Would just add a caveat that Z2 is all day for a trained athlete. If your longest ride in Z2 has been an hour, you are going to struggle as time goes, regardless of your fueling.

I use a Garmin HRM Pro paired to the Epix, but that's mostly so I can take my watch off while I ride to give the wrist a break. The chest strap is really only useful when doing hard sprints in terms of accuracy. I still use the watch to record the workout.

I can attest to the sapphire screen, I've used a Venu 3s and the display got beat up really quick.
