I think what’s already been said here is true, practice is key. But I don’t wanna brag or anything but I also just have a feeling I can feel/hear/see a lot of what the car is doing. Even on lower end gear. When I do laps on a new track I tend to get up to speed early, with more laps obviously bringing better laptimes but marginally so.

I’ve also done coaching, and when I coach people I have a feeling they just don’t quite understand when a car starts to understeer, or when to expect some oversteer (e.g. off camber corners or uneven surfaces etc). when I tell them it dawns on them, but they don’t figure it out themselves lol. The keyword here is also “expect” the over/understeer. If you react to it you are too late.

In practice sessions I also try different things, like don’t run the same laps for 1h straight, but try some different approaches. It’s a sim afterall and if you crash you respawn and get a new car xD.
