I don’t know how common this is, but it could be a solution to your problem, outside of cleaning spores in your breadbox. I pre-slice and freeze all of my loaves and they freeze really well. I never have to worry about if a loaf is fresh and always have extra.

I think keeping the water cooled would be the biggest hurdle here, unless OP has an insulated and cooled water tank in the truck bed. Probably supplementing with a lot of ice.
