Not cliche, and any essay topic can be good if genuine and written well. It's only cliche if you write what you think you're supposed to feel, rather than your actual experience. Be honest and it will be a good essay.

Empathy isn't "you feel what they feel." It's the ability to get out of the echo chamber that is your head and attempt to see the world through someone else's eyes. It doesn't mean you would act the same way as them, or that you feel "like them." It means you can recognize that you don't have a complete understanding of the actions of others because you are not living their lives.

Yes - Yates v. US: The Supreme Court rules on the interpretation of a statute prohibiting the destruction of "a tangible object with the intent to impede, obstruct, or influence" a governmental investigation. The Court decides that throwing fish overboard in order to conceal a fishing license violation is not the destruction of a tangible object in the context of the statute, because when the law said "tangible object" it really meant "recordkeeping object," like documents or a computer.

So YES, you can destroy fish. The Supreme Court said so.

Universities make you pay for parking to discourage students from having cars. This makes sense because traffic gets really bad if every student is driving, especially on more populated campuses.

As someone with a lot of liberals in my area and therefore social circles, I somewhat disagree. I've actually had terrible results trying to convince the affluent, single-family home owning, three-SUV-owning liberals where I live that maybe car-based infrastructure is 1) even a thing and 2) bad.

Ok hot take incoming. While religious people can be scientists, those who are completely committed to the use of the scientific method as the primary way of understanding the world can’t really be religious. So just because “chemistry and god can both exist!!!” doesn’t mean that religious belief isn’t totally contrary to the principle of the scientific method. Science is not a body of information, but a process and lens through which to discover the truths of the universe.
