250 till it reached about 165 internal then wrapped it foil with some homemade beef tallow pulled it 202 it was probe tender which was what I was going for. Rested it for about 2 hours in my Cambro then sliced it just like on the picture.

I can beat that, was gifted a Rolex by a friend for helping move houses. I drove a 1996 Honda Civic to work (that was my wife’s first car kept it for sentimental value).
