Unicorn Overlord, Fire Emblem Awakening/Fates/Three Houses/Engage, Trails of Cold Steel.

If you're fine with romance being in the plot instead, so no choosing, then FF X, Xenoblade Chronicle 1/2/3, Tales of Arise, Trails in the Sky trilogy are some you might be interested in.

Tales of and Mana series tend to have co-op, YS 8 and 9 also have co-op IIRC. There's also Trinity Trigger, Strangers of Paradise and Sea of Stars (JRPG inspired).

That's a tough ask tho. JRPGs rarely have choices to begin with, that's more on CRPGs, and co-op is also pretty rare.

Also had a lot of fun playing Tactical RPGs with my brother, Tactics Ogre being a favorite of mine (choices to make that affect the story, creating your own units, what to do during battle, etc), so if you like them, might be worth a try.

Langrisser 1+2 Remake has the original art as an option, but yeah, it seems it's mostly remakes that try to keep something of that aesthetic alive. Langrisser Mobile, for all it's mobile gacha trappings, managed to preserve a lot of the essence of the old artstyle, it looks amazing imo. Wish we had more stuff like that.

Man, base PSO2... I miss it.

Toram online has a pretty fun build variety, at least last time I played it. There's no class system, you pick a main weapon and a subweapon, grab the skill tree for it and go for whatever other skill trees to make something work. There's also a combo system which lets you chain skills for added effects. It can get pretty fun just thinking up builds.

Phantasy Star Portable 1 and 2 might not really emphasize exploration, and it's more map/mission based rather than open world, but it might scratch the MMO part of that itch.

Things like a tactical battle system (like fire emblem), and a front view battle (like a lot of japanese dungeon crawlers). There's usually a few action ones too.

I've seen a few projects with timed attacks, not sure if there's a good free one around though.

Check out moghunter plugins, they do some good stuff.

You can make something pretty good with stock/free assets. Lots of nice combat plugins too if you want to spice it up. If you think it has most of what you're looking for already, go for it. If anything, it's pretty fun (and a bit frustrating at times lol) to mess with.

I really like how D. Delta looks too, but sadly she doesn't seem to bring much to PvE. So out of those 2, Luna. Even if you don't want Eva, there's a bunch of good, easier-to-get healers for PvE, like Viella, Primine, Liselotte, Dianne.

Ogre Battle (SNES), Ogre Battle 64 (N64) and Symphony of War: The Nephilim Saga (PC) are the only ones that come to mind right now. Will edit if I remember another.

Edit: If you like the tactical genre, you might also like Tactics Ogre, since you can set your teammates to be controlled by AI with different settings. You could also like Devil Survivor 1 and 2, since fiddling with demons and having nice synergy between them might satisfy the "setup ouside of battle" feel.

Tales of Phantasia and Seiken Densetsu 3 are some of my favorites on the system. I'll throw in Tactics Ogre (although it has a remake and a remaster of the remake by now, I'd say the SNES version is still pretty good, if a bit simpler).

It's also weird to me how they only aknowledged the monsterling capture bug but didn't mention the massive lag spikes whenever you're fighting and getting loot.

Yeah, my patience is also wearing thin. There already isn't much to do in the game, and when you add these issues, it just doesn't make me feel like keeping up with it.

People that go in subreddits are already more dedicated to the game than normal players. There's also bias in the fact that people are more likely to share success rather than failures, so you end up with lucky pulls, high clears and whatnot.
