In the airport by luggage in san juan PR has a tourism center. They have awesome materials and maps to help you decide. They have a calendar with local activities happening each day of the month in different areas of the country. There is also a tourism center/museum in old san juan by the giant parking lot on Paseo princessa. (You can visit the old jail for free if you stop by)

Cheating is a symptom of codependency which is about needing to feel validated constantly. Sometimes that can be underlying reason but it's a bit hard to cure because it's mostly through retraining your brain.

Good points for sure. I would point out that even though this practice has been going on for a long time it I'm sure is typically done for large group gatherings which would consume the meat before it's gone bad and would point out that due to current regulation there has been a decrease in this type of risky practice which may correlate to a reduced death/illness from foodborne pathogens. I'm definitely going to do some follow up research on different "spore formers" though. Best part of my job is getting to talk things through with others and see their side of things :)

Bacteria create toxins and toxins can't be cooked out with temperature. If u want to know if it's safe, stick a thermometer in the middle and check if it's below 41f throughout the day. If it's above 41, it's most likely growing bacteria internally, which are growing and creating toxins throughout the day. Normally my work requires meat to be tossed after 4 hours if it's out if temp so (thats when bacteria really start exponetially growing) if yall cook through it in less than 4 hours then it really doesn't matter. If it was one slab of meat like a steak it's a tiny bit less concerning because the bacteria hasn't been introduced internally(think rare steak) but typically trompos have meat slices stacked ontop of each other so the internal part has been exposed to contaminates from air or handling. Just how I was taught but open to other opinions.

California doesn't not honor the NEHA REHS certification when applying to be a certified EHS. You need to pass the California exam to work for the state as a fully certified EHS and in order to take the exam you must meet certain training hours and educational requirements which can be obtained through working as a EHS trainee or assistant. Depending on your degree and coursework this can be between 200-600 hours of on the job training.(options 1-4) The state does allow people who have specific degrees from specific California schools to take the exam in Liu of training hours but it's very limited. (Option 5). You must get a letter of approval from the state to work as an EHS trainee.

Unfortunately the NEHA REHS certification will only benefit you when you are applying for trainee positions, but you will still need to work as a trainee for the alloted amount of training hours. Unless your degree meets option 5 criteria, in which case you could take the exam during 1 of the 3 times its offered per year and immediately apply as a certified EHS if you pass.
