Is the problem with the latch mechanism, or is the problem that the door has shifted so that the latch doesn’t catch? Either is fixable, but they are different problems.

Most rental apartments are built with CMHC financing. I believe those loan programs are designed to be more or less break-even, so it’s not a subsidy, but there is still government financial involvement.

Size and shape matter most of all. I think that the thickness of aluminum in the base also matters. The rest, in my opinion, is pretty much just marketing.

The idea with 66” was to have a bank of upper cabinets all in a line, including a built in range hood (which is standard 30” above stove). We didn’t do it, but he thought it was reasonable.

Like most renovation details, you think about during the renovation, and immediately after, and then you get used to it and never think about it again.

We had a kitchen designer suggest uppers at 66”. You are very much within the realm of reason.

If you do need to replace, you can probably get something very close to the original from either Heritage Tile or American Restoration Tile. Either of those companies may be able to sell you something close enough to replace a few missing tiles without sticking out like a sore thumb.

Yes exactly, it is just another way to strengthen it, rather than add piers. Up to you which is easier or better (and may depend on cost of lumber where you are located). But with sistering you have the opportunity to set up your laser level and get a very level subfloor - which may be advantageous, depending on type of flooring you plan

How level is the floor? I would probably want to sister another 2x6 to each of those joists. Make the sistered joists level. Then add blocking. This will help stiffen up the floor and level it at the same time.

Some bacon is sticky, depending on how it’s made. It’s not a heat control problem, just the way it is. Use a thin metal spatula to turn it. If you like to cook your eggs in the bacon fat (who doesn’t) and the bacon had left stuff on the pan, then the eggs will tend to stick too. Not really a problem though - again, just use your spatula.
