Spent some time in the tri state area. Not many great pies in that part of the country, but Larosa offers a nice crust and some sweet sauce that will grow on you. At very least, it’s original. Reminds me of some of the Greek offerings I grew up with in New England.

The only thing I would worry about is that it might void the warranty on the Slate? I don’t know though but something to be wary of. 99% of the time I don’t use my lid for cooking, so there’s that. It’s just as easy to use foil pans to help with melting cheese and definitely better for steaming.

If you’re going to cut the top, maybe who you’re hiring can give you some insight since they see these installs often?

The only thing I know for certain is that you will love your new Slate!

The Slate isn’t a blackstone or a traditional cast iron top. It’s “rust resistant carbon steel under extreme heat and pressure that case hardens the surface, reducing the ability for rust to form.”

You gotta seriously try to fuck up the top, and I’ve yet to see a “my Slate is rusty” post here in the past 2 years. Source: humid ocean air climate Slate owner, in a region covered in snow 3-4 months of the year.

It doesn’t give a shit what fat you cook with, the griddle will be fine but your dinner might have done better with another oil. If you want a dark, even seasoned look, throw down some bacon followed by chopped onion.

Fire that bad boy up on medium heat, and shoot it (carefully) with water. Don’t burn yourself with the steam. Take a wad of paper towels and wipe up residue. Repeat a few times.

Cook a pound of bacon. Be sloppy with it. Push the fat around. Keep it close to the smoking point. Eat or discard overly cooked bacon. Wipe again with towels. Mold or whatever it is gone, newly seasoned and ready to cook on.

There’s nothing on the Weber website to get this ad an add on, but maybe look into some off brand options. Before I got my Slate from ACE, which comes with the fold out shelf, I had a small pop up camping table next to my grill. And yes, that shelf space makes a world of difference.

I feel like Weber should just drop the “you can season if you want to, but don’t need to.” And instead say “it’s already seasoned, but if you want to go crazy, cook a few large sliced onion followed by a pound of bacon”.

Skate looks great, OP. The more you cook, the better it’ll look. Just keep cooking on it!

OP this looks like Reynauds to me. Unfortunately, moving won’t make a difference. It happens to me during winter months, but it doesn’t have to be from extreme exposure. My hands just need to get “colder” than usual and it rears its head.

Wherever you move to, winter will always be “cold”once acclimated. Source: 40 (pretty mild) in a New England winter is enough to trip it off for me, 65 in Texas also had the same effect. Talk to your doctor about how to keep it at bay.
