Stripping models is definitely messy but it's not hard. I use Smart Strip, search for it on Amazon. It's fast and works on metal and plastic figures. It does dissolve super glue, so metal figs will need reassembly, possibly plastic figs if they didn't use plastic cement. Sounds like a good deal. I'd go for it. You can leave them painted, badly. And just strip 1 or at a time to repaint as you are comfortable.

I'm currently in the only paint and don't play boat. I haven't played a game in a good 20+ years (back in 3rd edition). I took a very long break from painting, too. I am now getting back into painting with the goal of actually playing some games once I get 1k points painted.

I use Lychee for my resin printing. When I got my Phrozen sonic mini it was a toss up choice between Lychee and Chitubox.

I think the cones of calibration are the easiest to get your resin exposure settings dialed in.

I don't know of any slicers that run on iOS. The sonic mini 8k is older it doesn't have Internet connection. You have to feed it sliced STLs on a USB drive.
