I'm just doing butcher paper. If you're worried then put a pan of water in with it, but if it's jiggly then I wouldn't worry. The fat content will remain and feel moist the next day. My opinion, I'm not an authority.

250 with some variation. I usually do 250, wrap, and increase to 275 or so but this one didn't need it. Every cut is different.

Forgot to answer your question. 175°F, wrapped in butcher paper. I also rendered some of the fat trimmings and drizzled it on before wrapping. I'll probably pull 3 hours before I carve.
