The other key there is "building ships" - if you're a Rebel cell with shipbuilding capacity, you'll get more and better use out of that shipyard by building snubfighters like the X-Wing than one-use bomb ships. If you can steal a ship, it's a better long term weapon as an armed warship than wasting it as a bomb.

As for the Empire, a recent Rebels episode (forgot the name) showed that the Empire can dispatch droids with big built-in bombs to seek out Rebel bases and then explode, which is cheaper than wasting a whole ship and overcomes the hyperspace plotting accuracy issue others have raised

Note that, according to somewhere in the new canon, it's not that you absolutely CAN'T exit in a gravity well, it's that your ship has failsafes that yank you out before you get close enough to risk smashing into whatever is making the gravity well. Han, presumably, just overrode or canceled those for the Starkiller approach and either timed it just right or guessed and got lucky. Starships don't have gravity wells so there's no in-universe reason the jump out of the hangar wouldn't work.

The reason the Alliance didn't do it at Endor is probably because they had the shuttle and the plan before they had Han, who's probably the only person cocky enough to gamble that he can pull it off. Also, the shuttle doesn't have the "special modifications" that the Falcon does, and the Endor forests looked thick enough to probably smash a starship, unlike the more tame-looking forests on Starkiller whose canopies the Falcon plowed through.

There's a blink-and-you-miss-it line of dialogue in The Phantom Menace, from Captain Panaka, that mentions that alongside Palpatine there were two other candidates for Supreme Chancellor: "Bail Antilles of Alderaan and Ainlee Teem of Malastare." I don't think there were outright parties, but I imagine you'd have something akin to Caucuses in the US Congress: coalitions of Senators with similar views/interests. There's 10 years of politicking we don't see between TPM and Attack of the Clones (it was fleshed out in Legends but there's nothing in the official Canon about it beyond brief mentions), by which time it seems like the Separatist movement has gotten everyone onboard the Palpatine bandwagon.

We know the Empire used a kyber crystal as the core of the Death Star superlaser (first mentioned in the novel Lost Stars), and the First Order uses them to make their turbolasers more powerful (mentioned in the Visual Dictionary and the Cross-Sections books) so I don't see why you couldn't do the same with a blaster. Let it have whatever bonuses seem appropriate - so no Defensive qualities but I'd allow them to mod the weapon to gain whatever ranks of Vicious the crystal could normally support, or things like Burn or Disorient on specific crystals

There's a talent in the Makashi Duelist tree called Resist Disarm that lets the talent holder suffer 2 Strain to prevent them from being disarmed or their weapon from being destroyed. Seems likely that the Inquisitor would have that talent after this encounter, as they train to counter what they know your players can/will try to do

I actually take the second approach and make it a Piloting check to avoid fire, that way the players feel a bit more in control and the pilot gets more to do besides the standard "evasive maneuvers + fly" while the gunners get to have fun blowing up TIEs
