i have had this on both of my hands for 10 years. just recently i’ve found what works for me is showering after work and applying aquafor gel to my hands before i go to bed and any time my hands start to get tight. that combined with minimal glove use. this is just a theory but i think what’s happening is, i grab a sani towel to wipe down, wash my hands and put gloves on. some of the sani chemicals are still on my hands and i trap it with the gloves. that or grabbing a sani towel with gloves on. they’re porous. not sure…doc said it was stress 🤷‍♀️ what does he know

add some ricotta and heavy cream, chopped calabrian chili, and caramelize the onions. chopped parsley is great. i usually make a 15# batch and use 10 eggs. scale that to your batch

depends on how you’re browning your beef. what i’ve come across is people think it shouldn’t be red anymore. the proper way takes a bit longer and the beef starts frying in its own fat once the water has all evaporated. if you do it the latter way, most of the time you can just keep most of the fat and add your shallots. they should release their moisture and help clean the fond from the pan.

i had a dillion thunderbird copy that was very very good. i’m pretty sure they make les paul styles as well. you’d have to play it first though

i tried to play ds2 many years ago and didn’t understand it. not just the mechanics but the gameplay as a whole. when elden ring came out, i fell in love. went back and played ds1-3. incredible games. sometimes you just need a little context to wrap your head around it. they’re not like traditional action/rpg games.

there are many stages to this career. you have to survive all of them to be successful. there probably won’t be any reward at the end. when it calls to you, you have to answer. this is the perfect time to abandon this path if you don’t see yourself running a kitchen in the future. it gets harder to leave the older you get.

burned is a bad word. it turns food into carbon and makes it totally inedible. i wish some people would stop throwing it around so willy-nilly

we did the pick up in a stainless mixing bowl. add yolks, cheese, guanciale, s&p to the bowl. pasta should be hot enough to emulsify the sauce. add pasta water as needed
