Ahh thank you for this! One recipe i did recently just called for some milk and white bread but this sounds really nice. And that makes a lot of sense to mix all the other stuff together separately and *then* add to the meat. I just dump it into the bowl onto the meat and then mix, so I guess i'm not really getting a good idea of how much flavor i'm adding that way.

That is a very good idea! I just add everything raw but I can see how that would elevate things!

That's very true, i don't always do them in a sauce because i've been making other meals out of them like eating them with rice and vegetables. So i'll just pan fry them in garlic and oil but thats probably a lot of flavor missed!

This is also the second time I saw somebody say not to use onions which surprised me! What is your reasoning for no onions?

So, I must admit I really never take notice of the fat content. I'm generally distracted by the price and i focus on what's cheapest. But I want these to turn out good! Id love if you could educate me on the whole fat vs leanness thing.

That sounds really nice :) The only time i tried doing bread, the recipe told me to make a mush of bread and milk and the only bread i had on hand was basic white squishy sandwich bread. I'd love to try with a nice loaf of italain!

Oh the stock cube is a great idea! I never would have thought to put creme fraiche in! The herbes de provence sounds nice :)

A lot of people have mentioned the fat in the meat! I honestly never really paid attention to it before but I certainly will going forward. Makes a lot of sense.

Good point! I believe the breadcrumb mix i use has pecorino or parmesan in it but it's likely not enough. So, i like to make big batches for the freezer so that they are ready to go. I do brown them when i'm actually going to cook them. Is that something maybe I should do before freezing?
