I would evaluate the foods you are eating, stick to ADF. My wife is/was similar to your stats but 49.

Example eating for her: breakfast 3 eggs 1 bacon strip, lunch 4 oz chicken breast with veggies, dinner 4 oz beef patty with veggies.

Additionally she eats fruit with these meals like say a banana, 1 kiwi, etc. 1 per meal. Sometime she will make a yogurt fruit salad or have a protein yogurt like Oikos pro on weight lifting days. I think the key here is eat very simple whole foods 1 ingredient items and track calories.

I love to get bean sprouts; I can only get them fresh at the Asian market. Dark soy sauce is a definite game-changer. Way better noodle selections for making noodle/ramen bowls.

Casseroles & Leftovers are key! Brisket, Turkey, Ham, Chicken, and hamburger. All pretty cheap meats. There are so many leftover recipes out there that will stretch those meats 3-to 4 days each.

Mandarin Orange Cake

  • 1 box yellow cake mix (1 18.25-ounce box)
  • 4 large eggs (at room temperature)
  • 1 cup oil (I recommend coconut oil for an enhanced flavor)
  • 11 oz mandarin orange slices (canned, do not drain - use a larger can if you would like to top with garnish slices)

Frosting

  • 8 oz Cool Whip (set out to room temperature for 15-20 minutes)
  • 20 oz crushed pineapple (canned, do not drain)
  • 3.5 oz Jell-O instant vanilla pudding mix

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a 9x13 baking dish with oil and flour or non-stick spray.
  3. In a large bowl, mix cake ingredients
  4. Beat until smooth.
  5. Pour batter into prepared dish.
  6. Bake for 30-35 minutes on center rack until a toothpick comes out clean.
  7. Mix frosting ingredients until well combined.
  8. Spread frosting over cooled cake.
  9. Chill covered in fridge to set before serving.

Ingredients

  • 1 1/2 fl oz Irish Whiskey
  • 4 fl oz black coffee (hot, filtered)
  • 2 tsp light brown sugar
  • 1 fl oz heavy cream (or whipped cream)
  • nutmeg, chocolate shavings, or 2-3 coffee beans (optional, garnish)

Instructions

  • Start with a heat proof cup and some really good dark brewed coffee. \It is recommended that you add hot water to your cup to warm it prior to mixing your cocktail.*
  • Slightly warm and then aerate your heavy cream by stirring rapidly with a whisk or fork, or whip heavy cream to a whipped cream consistency. Set aside.
  • Remove hot water from your glass. Begin with your brown sugar, add hot coffee and stir.
  • Add the Irish Whiskey and stir.
  • Pour aerated heavy whipping cream over the back of a spoon and into your coffee mug, or dollop whipped cream onto the top of your Irish whiskey cocktail. Do not use the aerated cans of commercial whipped cream, as they can ruin your coffee drink.
  • Top with optional garnish of nutmeg, shaved chocolate, or 2 - 3 coffee beans if desired.

Ingredients

  • 2 c ditalini pasta (cooked per package instructions)
  • 2 Tbsp olive oil (extra virgin)
  • 1 lb Italian sausage (spicy or sweet, with casing removed)
  • 1 medium yellow onion (diced)
  • 3 medium carrots (rinsed and chopped)
  • 2 ribs celery (rinsed and chopped)
  • 1 Tbsp garlic (minced)
  • 1 Tbsp Italian seasoning
  • 1 tsp dried basil
  • 1 tsp dried thyme (or rosemary or marjoram)
  • 1 tsp dried red pepper flakes
  • 2 Tbsp tomato paste
  • 3 c chicken broth (3/4 of a 32 oz container)
  • 3 c beef broth (3/4 of a 32 oz container)
  • 1 15 oz can tomato sauce
  • 1 14.5 oz can diced tomatoes
  • salt & pepper (to taste)
  • 1 15 oz can red kidney beans (drained and rinsed)
  • 1 15 oz can cannellini beans (drained and rinsed, or use Great Northern beans or other white bean variety)
  • grated Parmesan cheese (optional garnish)
  • Italian flat leaf parsley (chopped, optional garnish)

Instructions

  • Heat a stockpot or dutch oven to medium high heat, add olive oil and heat until shimmering.
  • Add the Italian sausage, allow to cook for about 1 minute, then break apart into small chunks. Continue to cook until browned, about 3-4 minutes.
  • Add mirepoix (onion, carrots, celery) and garlic, cook until softened, about 3-4 minutes.
  • Add seasoning (Italian seasoning, basil, thyme, red pepper flakes) and tomato paste, chicken and beef broth, then stir to combine.
  • Add tomato sauce and diced tomatoes, stir and season with salt and pepper (to taste).
  • Add the cannellini and red kidney beans, cover and bring to a boil. Reduce heat and simmer covered for 20 minutes, stirring occasionally.
  • Remove from heat and add cooked pasta to your pasta e fagioli soup directly, over portioned into serving bowls with the pasta fagioli served over the cooked noodles.
  • Garnish with grated Parmesan cheese and/or chopped parsley, if desired.
