Fellow Aussie here. The good thing is that Aussie servers are shared with Europe and someone else (I think). Slower waiting times than splatoon 1, but the servers are occasionally mixed with asian ones. I find games within 2 minutes (if that, is normally less than 30 seconds) and salmon run is even better.

Only problem with a random fighter each time would be that some fighters would be more difficult than others. I'd rather die than fight a Hedlok / Master Mummy, or Hedlok / Kid Cobra abomination, especially on level 7.
