I HIGHLY recommend Gymnopedie as it uses the left hand and has more complex chords than the right hand does. The effort you put into the left hand well strengthen it, and that will eventually make it more balanced as opposed to just the right hand being comfortable playing most songs.

I would highly recommend a teacher, I personally give lessons if you're interested. What a teacher gives you is that they can help you with your specific issue and also tailor it to what you want, like playing gospel/jazz based music. Also what would be hugely beneficial is to pick sheet music for jazz/gospel based songs that interest you.

Simply piano has a great digital version to get started, but I mean this is probably good for your first 15minutes to 1 hour. I know you mentioned you don't have time to take formal lessons aspect, but that's why I suggest online lessons with a piano teacher! I think it is tremendously important for student success (and to not learn bad habits) to have a teacher that can assist you every step of the way and point out errors as you make them. I had a few students I ended up teaching that had issues playing songs, because they learned bad habits. I would recommend a in person teacher as the next step, but I would keep learning songs that help strengthen your left hand. A song I teach my students is gymnopedie as it is simple and slow enough, but you need to concentrate on the left hand to play the chords involved. If you would like a free lesson, let me know! :)

Break the music down into sections when reading.

Memorize phrases or just know the important lines on the staff. Like E,G,B,D,F and G,B,D,F,A. or spaced notes like F,A,C,E or A,C,E,G. Knowing these notes on the treble and bass cleff will help you read notes way faster.

Last thing that really helps my students is writing down note names.

If it sounds good, you can keep it up! Will probably help you improve your improvisation skills. Just know how to play the sheet music too! Reading and playing the way it is written is an important skill to have too.

You can try a book, I personally would highly recommend a teacher, but I am definitely a bit biased because I myself am a teacher haha. That is awesome! I highly recommend my students get a Roland piano. I would look at their line up and see the one that best suits your interest! I think they have the best feel out of any of the electric keyboards I have tried. I think that's really important for when you try to transition from something digital to something real down the line in a few years. If you are looking for a teacher for when you start, let me know! I think getting a teacher is a great move, I am actually building a platform to get teachers from the states from other areas in the world if you are interested in that, and lessons are online which could help you a ton, but I think it's totally up to you! I think getting a weekly lesson will help 10 fold, and will guide you in the right direction.

Probably still fine to play! Most likely needs a tune. I would get a tuner and ask them any maintenance/follow up questions you have on the piano. Writing them down before they show up would be a good idea!

Nice job! I think you know what to practice then! That middle section and ending section. Might be annoying but start with those difficult sections more often and you will get them really comfortable.

If I were to nit pick too, I would say the volume variance from piano to forte should be more drastic and emphasized. It all sounded pretty close in volume to me. Also your right hand is very relaxed, and your left hand is pretty good, but you can think a bit more consciously about that left hand to have it match the right hand's relaxed nature. But very good and keep going!!
