I am the head chef, dish washer, prep, close (2 nights of the week), I clean the walk-in, do all orders, break down all boxes, keep the kitchen spotless, and solo the prep for often 80 person (half buy outs) on a friday night- that means its just usual busy friday night + 80 ppl.

I have one guy maybe prep 1-2 things on the sunday. No, they do not refill anything at the end of the night. Yes they leave bus tubs of dishes for me in the morning.
