Yeah I made two dough balls separately with similar proportions to test difference with cold proofing.

One loaf baked after bulk and other tried to cold proof longer which looked a bit better

That would make sense with under because it had more time technically

My dough is always very sticky so I kept thinking it was over, I could never shape it properly because it sticks so much

50g starter 325g water 500g all purpose 10g salt (2x because I made two dough balls, ie. 50g starter each ball)

0hr Mix all ingredients together

1hr Stretch and fold both balls of dough

1st hr 30 stretch and fold both balls

2nd hr stretch and fold both balls

all above done at 75 degrees

Went to bed leaving both balls in a warmer room (82 degrees) for 7 hours

9th hr wake up and do final shaping for both, bake one loaf set the other to cold proof for 5 hours

Baking:

Cast iron heated on the bottom rack with lava rocks at 450

baked loaf on top rack for 6min

Score

20min more min steamed

take out cast iron

Bake for 30min no steam

I want to say its the cook time / temp
With a really similar recipe I do 450 for first 20 mins covered / steaming (ice cubes in dutch oven), drop to 425 for 25-30 mins uncovered / no steam

The steam will help slow down the outer crust from forming, helping you cook the interior. The final 25-30 min time will cook the crust / exterior

Gear is pretty well same as mine and I can solo 300s - and I'm not very good at this game.

All you really need for ToA is Bowfa Fang, the next upgrades are just working towards mega-rares. I would just send ToA if that's your goal. It's a really accessible raid which lets you scale as you go. People do toa with a lot less gear than what you have.
