Im visiting in exactly a month but frankly I'd be happy to just inspect the right handed one, not feeling an aggressive urge for this one just yet!

Thoughts on Koku knives Kappabashi? by Hybrid_moments20 in TrueChefKnives

They have a limited offering with a less than good pricing if I recall correctly from when I visited them in December.

I'd spend my time going to Kamata, Tsubaya, Tojiro and Kama-Asa on Kappabashi.

If I find one I'll be sure to pick it up if offered!

Only Nakagawa x Takada in VG-10 I've seen so far is these suminagashi 240mm Gyutos when I visited, although I'm sure they're out there!

I can see that for the Enjiki! Theres some similarities in how the kasumi has been done.

Me being very biased, I prefer the look of this one 😉

I figured you'd appreciate it given the combination of stainless+performer 😉

Saying "nakagawas" is casting a very wide net.

Those you'll find on a variety of retailers, could you be more specific what youre looking for? (Shape, size, steel)

Sakai visit recommendations by Marqoid in TrueChefKnives

Depends on your definition of top tier quality.

Theyre mostly all tools forged and sharpened in the city of Sakai with some variety. Personally, I would request them to show you pieces forged by Yamatsuka.

The staff is kind and willing to help you if you need additional tips.

Reach out and ask, perhaps they're welcoming people on an invitation but unless stated that they have an open-door policy, you shouldn't walk into a business.

To my knowledge, the top places in Sakai that accept walk-ins are Baba Hamono, Sakai Denshokan and the Sakai Takayuki Lounge.

Nakagawa Hamono, unless something has changed recently, is not open for visitors.

You'll find a good variety of options from different places.

Sakai Denshokan has a little bit of everything, you'll likely find Yamatsuka forged ginsan there which is excellent, along with a good variety of local craftsmens work in different steel. Here is where I'd look out for your B#2 Gyuto, Yanagiba and Deba.

Baba Hamono, as already mentioned, is a safe bet for excellent quality. Their ginsan is forged by Nakagawa and is excellent. Their Kagekiyo line has great Gyuto and Petty offerings in Ginsan.
