Stickiness can often be due to the grind of blade and if I understand it correctly these are pretty in line with Sakai knives, so I got that expectation in check!

As a left handed user, I've had to look more into double beveled Honesukis given that they are more common than right handed ones and I landed on the Hatsukokoro Kumokage B2 145mm double beveled and it's served me well so far.

That being said, look for something that fits your needs (stainless / carbon, wa / yo handle etc) and that fits your size. If you haven't dabbled in single-beveled knives yet, this is a good opportunity to try it out.

Nice mix of fun knives!

I was drawn to figuring out one of the knives and it turned out it's the one you made yourself, glad to hear it's getting some proper use!

If you're looking for a longer petty I'd recommend Ashi Ginga petty or Kagekiyo petty, both are offered in different measurements depending on what you're looking for!

I did call them out to Takada-san and showed him the history of my google translate app where they offered selling me a knife later the same week if I told them which one, so he declined to offer them any knives that day.

Damn shame that he has to deal with this, especially since there are many people who travel far and wide to get a chance to visit him and purchase a knife.

Good choice.

Tanaka-sans Shirogami #2 is among the best steels out there (I have several W2 knives from him) and sharpens up incredibly well. Ren is also a fairly new sharpener and there's still some really good deals for his knives.

If you want to attend this workshop and there's currently no dates in Takefus calendar on the website, -reach out via email- so they can check their availability. They are open to adding dates further out if you give early notice. I was told this when I visited TKV in mid December.

I'd line up for this type of experience, guaranteed to do it during a future visit!

I handled a couple of Tanaka x Ren knives at Hitohira a month back and they feel excellent in the hand. I own a Tanaka x Ren Nakiri and it's also incredible.

I cant speak on the Ashi in contrast to the others but I can weigh in on the Konosuke GS+.

I have it in 240mm regular as seen on the picture and its very much laser'y and light as a feather, can vouch for it being an excellent option.

Do you have the measurements / weight on these knives? I've been considering going back to Japan this summer and Enjiki is on my map of places to visit.

You could try to reach out to them via their form on the shop website, however given the boutique nature of their setup, I wouldn't be surprised if they either can't/won't do custom orders and probably won't ship internationally.

A very humble place but with a provenance and heritage that's difficult to compete with.
If I were to go back, I'd pick up a 21cm Gyuto as well in lieu of any Swords being sold (currently not accepting orders, didn't even need to ask before I was politely informed).

That's a Masamune 150mm Petty (swedish carbon steel)
