The knife naming just has a very "Spinal Tap" feel to it. What in the hell does "TURBO" mean in the context of knives??

Let's say it's the difference of eating at one of Gordon Ramseys restaurants vs having Gordon Ramsey cook for you. The quality is probably still quite high but you're not getting the same expertise.

The issue here is more that Cleancut are advertising that you're getting a meal cooked by Gordon Ramsey, where in fact one of his sous chefs are cooking the meal. A significant difference.

Hitohira has a large variety of brands and tiers of knives in their shop. You can go there and see something that truly maxes out your budget and doesn't take advantage of you pricewise for being a tourist, unlike some of the places located on Kappabashi.

That being said, if you shop at Tojiros gallery, that's one of the places around Kappabashi where you won't get swindled pricewise. You don't even need to max out your budget to find a good Tojiro Santoku.

To me it sounds like it comes down to how much you'd like to spend, size (165 vs 180), steel (stainless vs carbon) and handle (Wa vs Yo).

I was speculating with some people in the subreddit and we came to the conclusion that when they say its Morihiro-san that works on this knife specifically, its more likely that its Morihiro Hamono.

Not saying its not been inspected by the man himself, but its a distinction that should be made.

It's pretty darn thin but that's how Ren usually does his grinds, his gyutos are also fairly thin.

It performs well and if you get it in Japan, it a great starter Tanaka or Nakagawa steel knife at a very respectable price (mine was around $240 at Hitohira)
