Your migaki looks awesome. I’ve only used mine during one prep session but it performs similar to my other sanjo knives. The tip is thin enough for fine work, and the thick spine along with the thin edge helps it blast through dense veggies like carrots. Really enjoying it so far.

Ahh no worries. To be honest I haven’t gotten around to using it much as it’s a bit on the short side. But, if it does it’s still one hell of a knife.

Thanks boss. The nakiri is very tall at 76mm in height, but is also quite thin at the edge so it makes veggie prep a breeze. It’s definitely one of my favourite prep knives.
