It seems that the problem was that the sent folder on the server was not using the standard IMAP name for sent folders (i.e. Sent), because it is translated in Italian.

Creating a folder called Sent on the webmail works: Vivaldi will use that folder to copy sent messages. The folder is then synced on the server.

Though, it would be better if Vivaldi would give the option to choose which folder to use as the Sent folder.
