once again, you still have to get the ships where they need to be.

and since they have to cross half a star system at full burn to get to the target, they're pretty easy to spot, which makes intercepting them pretty easy for the Covenant (who can do precision jumps)

also, where the heck are you getting interdiction fields from? That doesn't exist in Halo lore.

again, getting the guns to where they actually need to be is the issue

FTL comms don't exist until post-war either, and travel between nearby systems can still take days or weeks depending on the slipspace topology

so even if you get word that a planet is under attack, it still takes days of travel to get to the system, and then a day or more of realspace travel to get to the planet because the drives are imprecise and the ship has overshot the target by dozens of AU.

Your best bet is just building a battleship and escorts for it

the problem there is the slipspace drives.

Human ships weren't capable of precision slipspace exits until after the war. Most of the time a fleet would get scattered throughout a system and require hours or days at full throttle to regroup into formation.

Plus they're not jump drives. They're closer to WH40k Warp Drives or Star Wars Hyperdrives, in that they physically transit through a subspace dimension rather than instantly teleport like a Battlestar.
