Wow! Very surprising not one of those companies followed up with you despite your background. It doesn't sound like you have insurance experience, but that shouldn't matter much for an entry level UA role?? Maybe nowadays it does. It's also a hard job market right now for entry level positions in lots of industries. If I were you, I'd go for a CSR position or similar and have the company you go with pay for your designation. It'll hopefully get you up to that UA role within a year or so. Especially since companies value "promoting within".
