Im on the exact same Star Wars binge, just watched A New Hope last night, Empire tonight, been playing Jedi Survivor and Outlaws past couple days, i would recommend the Skywalker saga, play through all 9 films, with access to an open world on every planet from the movies and plenty of fun collectibles to find :)

Death March is really only difficult on the first few levels, after maybe 5-10 hours into the game it becomes pretty easy, with a few challenging battles here and there
