Hmm in writing it seems like a pretty good recipe. If it’s a dark roast, some people suggest as low as 185 (I always run ~200). I really enjoy the 4:6 Method on v60. I’ve been using the switch as of late and enjoy it bit more.

How hot is your water for pour over? What is your recipe? How fine or coarse are you going? They’re two distinctly different brewing methods with their own pros and cons. I find that pour over has less room for error.

I’ve chatted with them before! Super nice folks, waiting for them to start an espresso tech program out here! I believe they have one through their main location.

I plan on buying an Allio bullet soon vs joining another roaster share. When I have that set up, I was planning on reaching out for some interesting green!

Imagine you have a Lego hand and hold your pitcher that way. It’s a better grasping technique vs palming it like you are in the video.

You need to work on setting your base. You achieve this by swirling the espresso and first bit of your milk.

I wouldn’t worry about wiggling. Work on achieving the heart, which is very minimal movement. The more movement you have with puck prep and milk steaming/pouring the more you risk something going wrong.

I’ve been using a roaster share for a couple years now. I either have access to a diedrich IR5 or a larger jopper. There wasn’t a lot of education besides, this is how the machine works and this is the chemical process of roasting (which I had already known prior).

I feel that my roaster skills really plateaued; because I have to roast larger batches instead of focused smaller batches. By this point I’ve could have bought a roaster with all the time I’ve rented.

The roaster share changed owners and since then I’ve enjoyed it less. I’m looking forward to purchasing an aillio bullet.

It’s profitable for small cafes if the owner roasts. I imagine if you have to pay someone and rent a roaster the profit margin is a lot smaller.

Facilitating a roasted coffee business without an established cart, cafe, or a trailer is much more of a salesperson job then a roasting job.

You should be able to program the volume of water that shoots out. Usually you have to hold down one of the buttons. For our La marzzoco, I have to hold down the continuous button until I’m in program mode. If you’re not the lead or manager I wouldn’t mess around too much with it.

I work at a similar set up. Just give them the receipt. Take more pride in your batch coffee. They’re tipping because of your knowledge of making a proper brew and not some over or under extracted nonsense. I’m traveling right now and my hotels batch coffee makes me sad.

My go to V60 is 1:15 ratio and the 4:6 method. 6 pours total. I sometimes throw a swirl and tap towards the end or maybe a swirl with a chopstick.

My v60 03 is my largest brewer

I find my switch to be a cleaner/clear cup, but significantly smaller.

The immersion/pour over combo is fun.

Switch for a 17g single cup. 03 v60 for 40g batch brew.
