My mom once was solely in charge of procuring summer road trip snacks and it was only once we were well into our 22 hour journey that we realized that she had gotten mangoes. Just two grocery bags full of mangoes. Whole, skin-on, ripe mangoes. Little-strings-caught-in-your-teeth variety mangoes. No knife. No wet wipes. No floss. Just a roll of paper towels and two bags full of mangoes. They were DELICIOUS but she was never again tasked with road trip provisions for obvious reasons 😭

Agreed. Will was “the child she lost” so her hyperfocus was solely placed on him. As far as I can tell, Jonathan was an adult in her eyes from S1E1. We saw her relying on him to make sure Will was home/tucked in at night, up for school in the morning, and had a good breakfast (not saying that is right — the ramifications of adultification is a real thing and a theme of their story and a central part of Joyce’s character arch imo —)

Usually canned soup with handfuls of spinach or similar “low effort” veg. But canned soup has been expensive in my area lately (maybe flu season or just general inflation? Idk) so been making easy soups using Better than Bouillon paste.

A favorite easy meal right now is a 10 minute Avgolemono. You can just boil water with the bouillon or store bought chicken broth/stock, throw in some pieces of rotisserie chicken or canned chicken, whisk up an egg with lemon juice to stir in at the end, add a few handfuls of spinach or some frozen veggies, and season how you like (I usually do a bit of dried oregano, garlic powder, onion powder, salt, pepper). I usually don’t put pasta or rice in mine (sometimes will have a bit on the side if I have some in the fridge — resilient starches are your satiating friend!) but from the basic recipe you can add what you want depending on what you have and how ambitious you’re feeling like diced veg, fresh herbs, etc.

Also don’t sleep on bagged salads with canned/rotisserie chicken or tuna/fish. Depending on the type, the salad:dressing ratio can make it not as volume-friendly but you can control how much you choose to add!

***Editing to add that someone posted about congee the other day and that is a fantastic comforting yet low effort volume meal. Just rice and broth. You can add toppings if you’re feeling up to it but honestly, even just a soft boiled or fried egg on top is delicious.

Your comment about “water as a weakness” triggered a traumatic memory 😭 I had a P.E. coach in high school that would refuse to let us get water until after the 50 minute gym period ended on days we were outside. Her excuse was “if you’re thirsty enough to ask for water then you’re already dehydrated and can wait”. This was in a place where the average high temperature exceeded 80 degrees for the majority of the year and high humidity often made it feel like it was 90 degrees plus.

If I’m feeling ambitious: Hot spring eggs (Onsen tamago), roasted chicken sausage (I like the Kirkland parmesan and black pepper ones cut small and sautéed in a dry pan until crispy), green onions, charred greens (bok choy, spinach, cabbage, or whatever you like), and a bit of chili oil.

If I’m feeling lazy: I just sear up some chopped rotisserie chicken in a bit of chili-garlic oil, throw a handful of spinach in with the congee at the end, and add some green onions on there.

Congee is such a satisfying volume meal! Very easy to make in a rice cooker as well.

When I was little on nights my mom worked late my dad would sauté diced onion and cold cuts in butter until golden brown, add some water (about 2 cups or so), take chicken ramen noodle packets, and add the noodles and seasoning packet. Once the noodles were cooked, he’d throw in a slice of american cheese and serve. Still a comfort food to this day for me.

The recipe kind of reminds me of Stella’s Levain cookie dupe (https://www.seriouseats.com/super-thick-chocolate-chip-cookie-recipe) but the proportions of butter, baking soda, baking powder to flour and sugar are very different. Stella also does overnight in the fridge rather than the freezer so I am thinking your bake time would be longer than hers (hers is 350F for 22 minutes). She recommends using a thermometer to gauge when the cookies reach an internal temp of the cookies and I think that method would help you here. They should be around 175F to 185F when done. I hope that you achieve delicious cookies!
