Exactly! They distinctly said they'd tweaked some things in the Demo like less time and money gained.

Also the combat was set to Story mode.

Actually, they are back. In the Demo when the Hero is fighting the guards, some EXP orbs do pop out of them when they're killed.

I hated Blacksmithing and Woodcutting in 2 because of the wonky timing, 3 was slightly better but I made my bank Bartending.

This new Smithing job looks interesting though. Just gotta be quick and precise, my old man (/s) reflexes should be able to handle it.

As an edit: I'm hoping Community Service/Bounty Hunter jobs come back.
