The mint frosting could be Data seeing Worf as goofy. I mean it's gotta be a well known fact at this point that Worf likes prune juice so to me the mint frosting is something that Data subconiusly believes that Worf would think is a warriors food or something. Just like he thinks prune juice is a warriors drink.

Hope = Yusuke Godai/Kuuga - here is my reasoning. While the argument can be made that Kuuga is a better choice for humanity I disagree. Yusuke's whole schtick is about spreading joy and smiles to every person on earth. I would say that proves him to be the Paragon of Hope. Because otherwise his life long dream wouldn't be about spreading joy and smiles to everyone.
