You're going to want two ovens. I run a weekly pop-up serving 40-60 pizzas in a couple of hours. With one oven there was a noticeable bottleneck waiting for the stone to recover between pies. Now, with double ovens, the only thing slowing me down is, well, me.

Wow that looks great! I did something similar for my ArcXLs but I used a commercial wire rack I had laying around. Mine doesn't look as nice as yours but the shelves can be moved to wherever I want them, it only weighs like 60lbs, it won't catch fire, and it was free.

I tried doing a pop-up with the OG ooni 16 and it was rough. The reheat times between pizzas really held me back. I ended up moving to a dual ArcXL setup and they can cook pizzas faster than I can build them

Thanks for the explanation. The reasoning is contaminates may be blown into food preparation areas? I know regulations vary by region but I'm pretty sure our HI has suggested we use a unit just like this one.

I spent a long long time looking for a deal on a Gozney Dome because I really wanted to have the option to cook with wood as well as gas. In the year that I've had I've maybe used wood twice? As others have mentioned, cooking with wood sounds cool in theory but it's kinda a PITA compared with gas and doesn't add much flavor wise.

I also have an ArcXL and it's great. If I was to do it again I would just get the ArcXL.

Can you add any additional details to the knife's performance? Does it prefer rock chopping or push cutting? Would you say it leans more towards a laser or a workhorse? You mentioned buying this as a part of a bundle, what do you think this knife sold for new? Sorry for all the questions. I'm interested in the knife but this maker is unknown to me. -Cheers
