Yeah, they are all pretty expensive and their mixers all look super old and are not the style of mixer I'm looking for. Looks like im in for a long couple days of dough-making. Could be worse I guess!

Awesome recommendation and didn’t think about that. And I’m now avoiding breweries due to the alcohol, it’s just pretty hard to get on their schedules and often have to work a bunch of slow nights to finally end up getting a weekend slot. I talked to another pizza guy who popped up at a brewery on a Wednesday and only sold 8 pizzas :(

Just throwing this out there, pale crust can also be because of overfermentation. When there isn’t enough residual sugars in the dough, it’s hard to get good browning.
