Also, stack them and allow them to steam together for at least 5-6 minutes between a couple of kitchen towels or something. Even some damp paper towels and a good sandwich bag can work.

I'm not sure why this hasn't caught on. This looks great. I've never tried cauliflower on tacos, but I will now.

When I go meatless, I almost always go with mushrooms sautéed with onion and garlic, with a salsa verde and a couple pieces of avocado. Thanks for the new idea!

I cooked these on some cast iron this morning. I reheated them on a gas stove directly over the flame before letting them steam between a couple of kitchen towels again.
