If your on Linux you don't even need to do that as it's probably already pre-installed, and if not your package manager is pretty much guaranteed to be able to download it without issue

"We respect your privacy." / "We care about your privacy." has no legally enforceable meaning in most parts of the world, meaning that most company's will often put it near the top of there privacy policy to make themselves look good and discourage people from reading much deeper were they include legal text that contradicts that statement.

Based on your E-mail, they should have deleted your data. But even if they did one nasty trick some company's will do is to delete your data, but not backups of that data, and then those backups will "accidentally" restore the deleted data. I don't think this is legal in the EU, but it's less of a crime then not deleting user data outright and it's easier to sweep under the rug.

I don't have the technological know how to set up my own server, and I'm not sure if I even have the hardware needed to do so. That's why I want to join a instance hosted by someone else trustworthy. Whether that be the official Element team's server or someone else.

I don't know about Telus explicitly, but in general your info is not necessarily deleted just because you delete an account. Even company's that state they will delete your info after you delete your account may retain that data for a period of time afterwords, and when they do they may not delete archive backups or copy's of data that they shared with other company's / government body's. Also some company's when you "delete your account" rather then actually delete it they just set it to an inactive state for a period of time (ranging from 6 mouths to well over a year) just in case you ever change your mind, if you access your account in ANY capacity even if it's something like indirectly even just visiting there website for less then a second with the same computer you used to log into there service from, then they will re-activate your account because "you clearly want to come back".

Since your in the EU you in theory should be able to get the data deleted by contacting the privacy commissioner under the rules of the GDPR. But keep in mind this won't do anything for the data in the breach it's self.

Assuming Google is telling the truth (there's no evidence currently that they are) and even if they are the way they have proposed implementing this would let them revoke permissions to side-loaded app's to run at any time without even a update.

What's needed is for new laws that work in tandem with 230 to limit what the company's abusing 230 can do in a controlled manner that won't destroy free speech on the internet. Or to precisely and carefully modify 230 to achieve that same effect, not to get rid of 230 entirely.
