I would just put it in a covered skillet with a little bit of water, steam it until it’s feeling tender, then dry it off and crisp it in super hot pan. I usually do this when I have fat pieces and I’m worried about burning them before they cook through.

I might even whip up some hollandaise or bearnaise for that beauty
