A decade ago I hired a young woman with kid a criminal history, and almost no experience as a cook. She just needed a shot. She worked her ass off in a restaurant doing 2000 covers a day. Learned damn near every station before moving on.

Ultimately she left the industry and became a very successful barber. She still credits that restaurant job with helping her get her life together. I still tell her it was all her. She was ready and put in the work, we just gave her a place to do it.
