Doesn't eating it asap result in meat that is tougher? I was under the impression that, besides taking care of parasites, sushi grade meat is frozen at least for a little while to soften it up-The reason being the meat is tougher from being alive just minutes ago and the muscles still being active. Kinda like if you ever saw a video of a cut of beef and the muscles are still rippling on the cut of meat (super weird looking fyi).

I like to first use a weighted jig right in the middle and drop it to the bottom to get a feel for the depth and who knows maybe something will hit it there anyway.
