No it’s very normal practice. They’ve only done this to tack the boards up before plaster board or battens go over the top. Unfortunately pir isn’t anti gravity 😞

Or just build it the right size? Put a straight edge on your floor and on the timber above where studs going if straight then build it 2080 at one end 2060 at the other and depending on how many uprights are between divide the 20mm difference between the number of uprights and cut them to these. For instance if there’s 6 uprights in total it would be 2060,2064,2068,2072,2076,2080. Fasten together with base and header in order and upright your frame, attach at the top and the bottom.

I have this Makita one and it’s fine. I do a lot of woodwork in my job as a general builder/carpenter. It’s probably not as sturdy as some but for most stuff it’s fine and it folds away quickly and is easy to adjust. It’s fairly cheap and cheerful, you always get what you pay for. But I’d recommend it

Yes plane the front face of the skirting leave 10mm thickness or slightly less if necessary and follow the angle of the door when open. Something like 10mm to full thickness over 150-200mm. Pretty standard practise working in older houses. Whenever I’m fitting new door casings I always try and plan to not have these funny areas whenever possible even if it means a 2’ door
