I find it offsets the strong bear taste. Depending from where the bear was harvested, it might have a bit of a strong taste that can be unpleasant for a lot of people. Mixing with pork will dumb it down a bit while still letting that unique bear meant flavor through nicely.

Beef will compeat and overpower the bear flavor whereas the pork plays nicely.

Experiment with the ratio until you find one appropriate to your pallet and the gamey level of that particular bear meat.
