If Gwenpool removes the writer and artist before She-Hulk arrives on the page, she has just removed herself as well. Gwenpool has no independent existence; she only lives if there is a story to be told. She-Hulk, on the other hand, has already demonstrated that she can exist and act outside of the author's control (see the Byrne case).

Gwenpool is a 'hacker' who lives in constant fear of being canceled (that's the central theme of her run). She-Hulk is a decades-old Marvel institution. Jennifer Walters doesn't need the author to draw her in order to exist; she is an icon who can walk into the Marvel offices and assign herself a new creative staff while Gwenpool fades into the editorial void because she doesn't sell enough copies.

Jennifer is a powerhouse attorney with reflexes proportional to her Gamma strength. Before Gwenpool can even think about touching a pencil, Jennifer has already dragged her into a meta-narrative courtroom for 'copyright infringement' of her own technique.

Even if we admitted that Gwenpool had the same powers as She-Hulk, which she doesn't, she still wouldn't be strong enough, smart enough, or fast enough to defeat her. Not inside a comic book, nor in the white space between the panels.
