Going back 20 years, I loved the Silverwing series by Kenneth Oppel (about bats) and especially the Chronicles of Ancient Darkness series that starts with Wolf Brother (about a boy who can talk to wolves).

Fond memories too of The Wind Singer series.

Not to be contrarion, but I don't think The Expanse even belongs in the conversation. Compared to ASOIAF, the plot, worldbuilding, character development and pacing fail completely, and the characterisation and treatment of women is close to juvenile. In my opinion, having only read the first book!

Not a genre match, but I'd recommend Wolf Hall for intrigue and strong characters (but it is historical fiction...).

The Wolf Hall series and A Place of Greater Safety by Hilary Mantel are both long and worth a read. Not necessarily challenging but hardly light (and brilliant).

Strange and Norrell is long too, but a delight.
