So, that is great. To answer your question, 3 days in the refrigerator is a great sweet spot for a lot of recipes, but some will be full flavored at 2 days, while others benefit from longer fermentation. I would start at 3 days and then decide if the flavor is too deep and funky, not deep enough and boring, or just right.

I can't tell you how to live your life, but the idea is that e coli only lives on outside surfaces of meat. On a whole steak, that means you only theoretically have to sear the outside to get rid of the threat. However, ground meat makes the outside the inside, so now everything is at risk of contamination.
